Waste (chapter VI)

  • Food waste is removed as quickly as possible from rooms where food is present.
  • It goes in closable containers, in good condition and easy to clean and disinfect.
  • Refuse stores are kept clean and free of animals and pests.

Pests (chapter IX, point 4)

There must be procedures to control pests. The Commission stresses prevention: doors kept closed, insect screens, no puddles, no food scraps, and unused equipment kept clean too.

Cleaning products, away from food

  • They are not stored in areas where food is handled (chapter I, point 10).
  • Hazardous substances are labelled and kept in separate, securely closed containers (chapter IX, point 8).
In practiceA kitchen bin with no lid, full to the top at the end of service, attracts flies and cockroaches: lid on, bag closed and out as soon as it is full.
