The 2022 Commission Notice on good hygiene practices describes the usual steps:
- Remove visible dirt: food scraps, grease, paper.
- Clean with water and detergent.
- Rinse.
- Disinfect.
- Rinse again.
From cleanest to dirtiest
- Cleaning starts in high-risk areas and ends in low-risk ones.
- Different materials and equipment are used for each, and they never go from a highly contaminated area to a less contaminated one.
- Watch out for splashes: rinsing one surface can soil another that has already been disinfected.
Water and products
Drinking water, at the right temperature, and products only as much as needed, following the manufacturer's instructions.
In practiceThe cloth used to clean the toilet cannot end up on the bar. Many places use
colours: one for toilets, another for the dining room, another for the kitchen.
